These are a standby at our house. Everyone loves them! I like to make a lot and then freeze them. I thaw over night or in the morning in the fridge and then reheat them by frying lightly(I freeze fried). I usually pair this with a green salad and home fries(either homemade or by Alexa- although Pioneer woman has a GREAT Hot crash potatoes that go well with this too!)

Lentils Burgers
3 cups cooked lentils (petite green lentils are most flavorful)
1/2 cup flour (I use garbanzo bean or rice flour)
1/4 soy sauce(Make sure to use GF version)
2 eggs (or egg powder equivalent)
salt to taste
If using fresh eggs and hot lentils, run cool water over lentils in a
colander. Move to bowl. Mix cooled lentils and eggs. Add soy sauce and then
mix in flour to desire consistency. It will be a little soft, but burger
should be able to be formed. A bit more flour can be added to have a more
solid burger, but then there is a stronger flour taste. When soft patties can
be formed and put on wax paper, but they can also be spooned onto hot pan to
cook. Cook 3-4 minutes on each side or until slightly browned. Enjoy with
favorite burger toppings or alone.

Christmas cooking Gluten free 2011:Oatmeal cookies
So I've been messing with different recipes. Here are my favorites that are updates of last year.

I double the above recipe and add 1 cup of gf flour..I prefer sweet sorgum, but they all work. It's important to have the cookies chilled, on parchment paper and use cool cookie sheets if you want a puffy cookie. I'm not a fan of lace cookies though. If you want lace, you can use the recipe as it, or on warm cookie sheets!

30 day hands-on play challenge
I've been struggling feeling like I'm doing what I want with the kids which is interacting and having fun. A friend told me about a 30 day hands-on play challenge here. My friend has older kids, but figured who doesn't love play dough! We sure enjoy it! Especially when we were able to make a gluten free playdough free from what we had in the house! I love doing new things without having to make a trip to the store!!
And I thought we would do it. The first thing to do is to make the goals, but since I never do things in order (hardly ever-rebel that I am :) ) I grabbed a gluten free playdough recipe from here and made that first. Then the kids and I went in the yard and found all sorts of nature things to make faces in playdough. I took pictures and will get them up shortly. So now that I've done that, here are my goals :)
To spend time enjoying each other's company and having fun

Exploring items I have in my stash that need to be used to have fun instead of staying hidden in "the stash"

Gluten free playdough
- 2 Cups Baking Soda (1 box)
- 1 Cup Cornstarch
- 1 1/2 Cups Water
- Color (we skipped this for white)
- Scents (optional): We added Orange Essential Oil
