"Baptism Beans"


These are a favorite of our family. They are cheap for a large crowd and we have served them at every baptism and lots of other functions :) Enjoy

CAFE RIO STYLE BLACK BEANS

Ingredients:

4 Tablespoons Onion, finely chopped
4 cloves garlic, minced
2 Tablespoons Extra Virgin Olive Oil
1 teaspoon Cumin
2 cans (15-16 oz) Black Beans (or equivalent of presoaked/cooked dry beans)
1 cup tomato sauce
6 Tablespoons Cilantro, chopped

Directions:
Chop onions and garlic. Heat extra virgin olive oil on medium high heat and cook
onions and garlic with cumin until soft. Add all other ingredients and simmer at least ten minutes.





CILANTRO LIME RICE

Ingredients:
3 cup uncooked rice
3 tsp. butter or margarine
6 cloves garlic, minced
zest from 1 lime
3 (15 oz.) can chicken broth
water---add to chicken broth to make 6 cups of total liquid
6 Tablespoons freshly squeezed lime juice
2 Tablespoons granulated sugar
9 Tablespoons chopped cilantro
Directions:

In a saucepan, combine rice, butter, garlic, lime zest, chicken broth and water. Bring to a boil. Cover and let simmer for 15-20 minutes until rice is tender. Remove from heat. In a small bowls, combine lime juice, sugar and cilantro. Pour over hot cooked rice
and, using a fork, fluff rice until cilantro is mixed in.
